Josh Capon has stated that he's always had a love for food, as both his parents were very good cooks. His first job was in a restaurant at the age of 14, and ever since then all his jobs have been in restaurants. After 2 years at University of Maryland, he left to enroll in the Johnson & Wales cooking school in Rhode Island. He was selected as a culinary intern of sorts at Charlie Palmer's acclaimed Manhattan restaurant "Aureole," and after his graduation in 1994 he began work for Palmer full-time. He then spent three years as executive chef at Manhattan's ritzy SoHo restaurant "Canteen." Capon is currently chef, host, party planner and the public face of "Lure" fishbar in New York City.
